This year, chef Karen Toroshian took over the Bozar Brasserie, created by David Martin (La Paix). He developed a kitchen with a lot of personality and traditional preparations that he puts to his hand in a very special way, such as mackerel with citrus fruits, a contemporary eye-catching version of eel in the green or Koulibiac of Scottish salmon with mushrooms and fresh spinach.
